Chili Sin Carne

1Toast dry ingredients
Add together dry ingredients into a pot on medium-high heat and dry cook the spices for about 5 min, until we get some toasting. Add in 1 tbsp of salt-sea-maine and 3 tbsp of oil-sunflower.

2Add in Water and Kombu
Add in 2 quarts water, kombu, and tomatoes-crushed in and heat until dry ingredients are soft, around 20 minutes. Along with 2 more tablespoons of salt-sea-maine.

3Add in Corn Chips
I tried to make some home made Corn Chips to eat some other dishes with and they didn't get the right texture, so I reused 10 of them in the sauce!

4Blend Sauce
Blend this mixture in batches with a blender until smooth, around 30-40 seconds per round.

5Add sauce and beans to large pot
Take your batched sauce and combine with the beans in a large pot. Add 2 more tablespoons of salt-sea-maine. Add another 2 quarts of water to thin out the sauce and provide some hydration for the beans to cook further

6Final Cook
Cook for about 4 hours on a medium-low setting. Add 2 more tablespoons of salt-sea-maine, more or less to taste. And 3 more tablespoons of oil-sunflower to create some nice small fat bubbles.
